Raffinose segregation into sucrose crystals is experimentally determined along with the modifications of the quantitative sucrose growth morphology under different growth conditions. Some segregation models are tested to investigate the raffinose absorption mechanisms. Deformed lattice zones inside the doped sucrose crystals give evidence in favour of a not uniform raffinose segregation, strictly depending on hkl growth sectors.
